Whole wheat Banana walnut tea cake .

A healthy vegan tea cake easily

for Paleo & gluten free diets


A good Tea time snack for all age or serve Warm as a dessert with a dollop of Vanilla or chocolate ice-cream


Banana tea cakes & breads make a very healthy , mid morning or mid afternoon snack for kids & toddler, as it’s totally healthy here i suggest you use dates which are naturally sweet & rich in Iron instead of sugar .

Personally I love making quick , healthy & less complicated recipes using as far as I can all organic ingredients,

here the bananas are from my own backyard garden , like many of us are blessed with .



For a -

Gluten free -

replace wheat flour with almond meal same quantity.

for Paleo Diet - replace sugar with chopped dates . ( as bananas are sweet no need to add anymore sweetener substitute here !)





Ingredients

  • 4 medium or 10 elchi mini ripe or over ripe bananas -

  • 1 cups whole wheat flour or 200 gm whole wheat flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • a pinch of salt

  • 1/4 cup sugar or raw cane sugar (75gm )can use chopped dates instead ( for Paleo diet )

  • ⅔ cup oil ( any peanut , sunflower or coconut oil )

  • 1 tsp vanilla extract(optional )

  • juice & Rind of one small orange .

  • 5 walnuts or dates chopped ( optional)

  • orange juice

Method:-

  • Preheat your oven at 180 C 350 F .

  • line a 7x4 loaf tin or 8”round tin with parchment paper / oil & dust well with flour

  • Peel bananas into a bowl and mash them with a fork. (or use a blender to mash the bananas.)

  • Add sugar, oil and vanilla essence or vanilla pod extract .

  • blend very well , mixing oil with the banana puree & till the sugar dissolves.

  • Sieve whole wheat flour, baking soda, baking powder, salt directly in the bowl.

  • Fold the dry ingredients into the wet ingredients very well.

  • Add the chopped walnuts and fold again. Apart from walnuts, you can also add raisins, pistachios or any dry fruits of your choice. Chocolate chips or cacao nibs can also be added.

  • Pour the batter in a greased or lined loaf pan .

  • Bake in the preheated oven at 180 C /350 F for 45 mins or till tooth pick inserted in the cake comes out clean.

  • If the top of the cake starts browning then cover the top with an aluminium foil .
