Prawn & sea food ceviche
A very traditional home cooked Peruvian way of cooking !

I often make this dish at the O Goa where ‘Fresh Fish from the local markets closest to you are available in Plenty .
For north goa where we are it’s the Betim markets often breaming with lobster, crabs , squid & Prawns and of-course there are days when ones lucky to get scallop , oysters too !
It certainly is more than -
A pleasure to make this simple yet very fashionable way of cooking & enjoying the fresh fruits of the sea specially if you happen to be at a sea side destination where fish markets are flooded with the freshest of the catch of the day brought in by the local fishermen !!

Ingredients-
ceviche sauce -
2tsp chilli red paste
150 ml lemon juice ( tarty on s )
4 tsp Ponzu ( you can use a mix. 1:1 Rice vinegar & orange juice as a subtitle
2tsp kiko man ( soya )
1/2 tsp fresh black pepper powder
2-cloves garlic finely chopped
1tsp ginger finely grated
few drops of Tobasco sauce
4 tsp salt water
For ceviche -
Prawns
scallop
squid
small red onion
1 Tomato ( nice n plump)
2-3 cherry tomatoes ( red , yellow & green if available)
1 cucumber
1 Ginger bud ( or few chopped Gari
1/2 cup Fresh coriander
1/4 cup ( 100 ml ) ceviche sauce
few sprigs of coriander fro garnish
To make salt water :-
1/4 cup plus 3/4 cup water , dissolve the salt & bring to a boil -strain & cool
method
Clean , wash & prepare the prawns , squid & fish .
De shell the prawns , remove the head leaving the tail intact , slit the top back carefully , just a bit to make it easy to pul out black string
cut the scallop -horizontal in 1/4 “ round disc s .
clean squid , remove the head , pull back the thin skin and slice into slim rings .
thinly slice the onion ( finely)
wash all veggies . cut the tomatoes into long slices - (6 pieces )dice the peeled cucumber into 2”pieces ( diagonal) finely chop the coriander
cut the cherry tomatoes into halves .
Gently mix together all the top fish ,tomatoes , cucumber onions in a bowl with the ceviche sauce , leave covered with a cling film to marinate in the refrigerator few mins or serve immediately
garnished with more coriander leaves & a slice of lemon!
