PASTA CARBONARA

A creamy dreamy spaghetti Carbonara !


Cant think of anything as easy & as popular for a modest & happy celebration on mothers day !

so cheers to a glass of chilled Chardonnay & a hearty Carbonara Alfredo or a fettuccine

Arabiatta , choice is your !


With practically most of the ingredients normally available in the larder , a simple healthy & easy comfort food, can’t go wrong !


This recipe is for 4 .

Here I have used an whole wheat pasta the favoured preference with all of us at home!





INGREDIENTS


For Carbonara

• 400 gm whole wheat Spaghetti

• ½ cup Bacon ( optional )

• 4 Eggs

• 60 gm grated Parmesan cheese

• 1/2 cup of cream ( home clotted cream used here )

•. Fresh ground pepper and salt to taste




METHOD:

•Boil the spaghetti in salted boiling water.

•When cooked to al dente, drain the pasta reserving one cup of its water for later use .

Beat up the eggs adding to it, half of the grated parmesan cheese, 1/2 cup of cream seasoned with salt and pepper ,

Sauté over medium heat,the chopped bacon till brown and crispy. Add the pasta adding water to balance the sauce consistency as required.

Add a dash of nutmeg stir well. The pasta should be hot enough to make a smooth sauce, not too hot as to scramble the egg and cream mixture.

Serve sprinkled with lots of Parmesan cheese




For Arrabbiata -


  • 1 Tablespoon Olive Oil

  • 1 whole Medium Size Onion, Chopped

  • 1 cup 200 ml Tomatoes Puree ( fresh tomatoes preferred )

  • 500 gm blanched & chopped Tomatoes

  • 4 cloves Garlic, Smashed

  • 2 whole Red Chili Peppers,( optional )

  • 2 Tablespoons Crushed Red chilli Flakes

  • 1 cup Fresh Basil

  • Salt To Taste


Method


Heat olive oil in a skillet on medium heat. Add onion and saute until translucent, about 4-5 minutes. Add in both kinds of tomatoes, smashed garlic cloves, chili peppers, crushed red pepper, and basil. Give everything a good mix then bring to a boil on medium-high heat. Once at a boil, lower your flame and allow sauce to simmer for 20-30 minutes. Test for salt, and adjust accordingly.


now just add the boiled al dente spaghetti to the fresh Tomato sauce above , add extra

fresh basil leaves , freshly grated parmesan

cheese & serve immediately!!
