This recipe is for 4 .

Here I have used an whole wheat pasta the favoured preference with all of us at home!

For Carbonara

• 400 gm whole wheat Spaghetti

• ½ cup Bacon ( optional )

• 4 Eggs

• 60 gm grated Parmesan cheese

• 1/2 cup of cream ( home clotted cream used here )

•. Fresh ground pepper and salt to taste

•Boil the spaghetti in salted boiling water.

•When cooked to al dente, drain the pasta reserving one cup of its water for later use .

Beat up the eggs adding to it, half of the grated parmesan cheese, 1/2 cup of cream seasoned with salt and pepper ,

Sauté over medium heat, the chopped bacon till brown and crispy. Add the pasta adding water to balance the sauce consistency as required.

Add a dash of nutmeg stir well. The pasta should be hot enough to make a smooth sauce, not too hot as to scramble the egg and cream mixture.

Serve sprinkled with lots of Parmesan cheese

For Arrabbiata -

  • 1 Tablespoon Olive Oil

  • 1 whole Medium Size Onion, Chopped

  • 1 cup 200 ml Tomatoes Puree ( fresh tomatoes preferred )

  • 500 gm blanched & chopped Tomatoes

Once at a boil, lower your flame and allow sauce to simmer for 20-30 minutes. Test for salt, and adjust accordingly.

now just add the boiled al dente spaghetti to the fresh Tomato sauce above , add extra

fresh basil leaves , freshly grated parmesan

cheese & serve immediately!!

Enjoy with A Chilled glass of White Wine !
