Mexican Fajitas
Healthy home made Fajitas !
There’s something so magical & yummy about this sizzling meat and veggies made with the authentic Mexican seasoning & home made sour cream , all easily made at home !
This irresistible recipe of Fajitas , we often call “grilled chicken with veggies “ for my cook to comprehend , hss become such a staple in our carnivore home with the youngsters , who are on special protein intense diets !!!
not only are these Fajitas ( grilled stripes of meat ) easy to make , but are a healthy way of protein rich diet and a complete meal instantly liked for its familiar tastes so close to our own food here !
I believe in making my own spice mixtures , it’s definitely better quality , quantity & of course cost saving too . Besides I know what the contents are , special for all the allergy people ....like me & not to overlook another important factor here , Its far healthier with no preservative added too !
I find this recipe way better than a store-bought fajita seasoning as all ingredients are freshly roasted & ground & it certainly adds a taste of freshness to the dish !
You could make a larger batch of this seasoning as it makes a perfect gifts to carry in a cute jars packing all home made by you , sure it will be more than a welcome gift to receive as who wouldn’t welcome - A spicy chilli home made - Tex-Mex Flavours !!


Here’s A suggestion for My calorie conscious Friends -
instead of serving the fajitas inside tortillas, You can serve them stuffed in Whole Tomatoes , Capsicums Or wrap them in lettuce or blanched cabbage leave to make delicious light snacks or a light cocktail dinners .
Instead of sour cream and loads of cheese as toppings ,
I often top my Fajitas with creamy Avocado dip - Guacamole - OR serve with
Hung curd / Greek yogurt !
Handy Fajita Seasoning Powder ( can be pre made in advance )
Ingredients-
1Tbsp corn flour
2 tsp chili powder ( mild chilli powder )
1/2 teaspoon salt
1 teaspoon paprika ( Kashmiri chilli powder)
1 teaspoon sugar / raw sugar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper ( hot chilli powder )
1/2 teaspoon ground cumin
Mix all the ingredients together and store in an airtight container.

suggestions-
Used smoked paprika ( smoke on open fire with the help of your tongs
The cayenne pepper might be too hot for kids so can be optional .
marinate with 1 Tbsp of the spice mixture blended with -
1/4 cup olive oil,
1/4 cup lemon juice or 2 Tbsp soy sauce or 1 tablespoon apple cider vinegar
600 gm meat/ chicken . Marinate in the refrigerator for 2 hours or overnight for the best results !!
Ingredients For Fajitas -
Ingredients-
1/4 cup vegetables oil
2-3 bell peppers
1 onion
600 gm chicken breast / meat
2 tsp chilli powder
1 tsp cumin powder
1/2 tsp coriander powder
2 -3 cloves crushed garlic
1/2 tsp Onion powder
1/2 tsp cayenne powder
1/2 tsp chilli flakes
1 tsp sea salt to taste
1/4 tsp pepper to taste
1 lime

Method to Pan sauté -
heat a pan big enough to accommodate the chicken & vegetable.
add 1/2 the oil , when hot add the sliced onion , sauté , now add the peppers sauté till cooked but still tarty ,remove onto a plate
to the same pan add the remaining oil , add chicken
with all the following spices till the salt & pepper only (note do not add the lime juice till after cooking & removing from heat or will taste bitter ) sauté for 3-5 mins , sprinkling water if required till cooked
now add the sautés vegetable kept aside , mix shut the flame & sprinkle lime juice
serve stuffed into tortillas or as desired , topped with sour cream !!

alternatively if you want to for bake Them -
1 yellow bell pepper sliced
1 red bell pepper sliced
1 small red onion sliced
600 gm of chicken sliced thin
3 tablespoons of Fajita seasoning
3 Tablespoons of oil
12 small tortilla shells
1 teaspoon lime juice or the juice.
Instructions- to bake
Preheat your oven to 425 degrees.
In a baking dish or casserole. Add diced chicken, sliced peppers, and sliced onion (can add courgettes )
Sprinkle the fajita seasoning over the vegetables and chicken.
Evenly spread the oil and lime juice over the vegetables and chicken and toss to combine.
Cook for 15-25 minutes or until chicken is cooked through and vegetables are tender.
Enjoy immediately stuffed in tortilla shells.
can add sour cream or Guacamole dip & chopped salad to garnish !
