Marinated Bocconcini Antipasti
These tiny bites of fresh a Bocconcini cheese make a fancy appetisers !
“To get the full benefits of milk, according to the health studies , adults should consume three servings of dairy – milk, cheese, or yogurt – each day. A serving size is 1 cup of milk or yogurt, and 2-ounces of cheese.”

Ingredients
200 g bocconcini cheese, bite-size
1/3 cup extra-virgin olive oil
1/3 cup wine vinegar
2 Tablespoons chopped fresh parsley( optional)
2 Tablespoons chopped fresh basil
1tsp chilli flakes
3 garlic cloves, minced
4 teaspoons dried oregano
1 red chilli ( I usually keep in vinegar , this can be optional )
salt & pepper to taste
Method :-
Dry the bocconcini well . I squeeze out the whey water , to keep my marinate undiluted you can lay them on a kitchen towel & blot out excess whey ( the liquid they come in )
Finely chop the parsley & basil , 🌶 vinegar chilli , this makes it mild in flavour .
put all ingredients except the bocconcini in a screw top jar & shake it well to mix oil,wine vinegar ,garlic , flakes & all
marinate the bocconcini balls ( can cut them in halves to make them bite size ) , refrigerated for a minimum of 4
hours , for flavour to marry !
serve as an appetiser / antipast
