Golden Apple Pie Yields: 6 to 8 servings

I make this every time when I am in Kodi and how I love making this pie with the fresh locally grown Apples !





Ingredients: for the pie

  • 5½ – 6 cups apples, sliced thin, I used local kodi apples when there , and Golden Delicious apples with a combination of green apples , in the city .

  • 1 tbsp lemon juice

  • ½ cup granulated sugar

  • ¼ cup lightly packed light brown sugar

  • 3 tbsp all-purpose flour

  • ½ tsp sea salt/ salt

  • 1 tsp ground cinnamon

  • ½ tsp apple pie spice / allspice ( optional )

  • ½ tsp vanilla extract

  • 1 prepared short crust, 16 oz .

  • 1 egg, mixed with 1 tsp cold water( optional can use milk for vegetarians)


Crumb Topping:

  • 1 cup all purpose flour

  • 1/2 cup packed light brown sugar

  • 1/2 cup granulated sugar

  • 1 tsp cinnamon

  • 1/4 tsp fine sea or regular salt( omit if using salted butter )

  • 1 stick or 1/2 cup unsalted butter

Directions:

  1. Preheat oven to 375 degrees

  2. Lightly brush the crust with egg/ milk - Bake for 4 to 5 minutes. Take out and let cool.

  3. In a large mixing bowl, add all your filling ingredients. Gently toss to coat all the apples.

  4. Put all filling into prepared crust.

  5. In a medium mixing bowl, add all crumb topping ingredients. Using a pastry cutter or your fingers, cut up the butter into the flour mixture. You want it nice and crumbly. Top pie and gently press into apples.

  6. Bake for about 45 to 50 minutes. If the crumble crust is getting too brown, cover lightly with tin foil and continue to bake. Check to see that the pie is done by poking with a knife or fork to feel that the apples are fork tender. Let cool for about 30 minutes to set up.

Ingredients:for the pastry crust


apple pie crust:


10.6 oz (300 g) all-purpose flour

1.05 oz (30 g) sugar

1 tsp salt

4.23 oz (120 g) unsalted butter, chilled and cut in cubes

8-10 tbsp ice water

In a bowl mix together flour, sugar and salt.

Using a pastry cutter or a fork, cut the butter into the mixture until the mixture is crumbly and fairly even-textured. There will be a few larger chunks. I like to mix it with hand too.

Add water and form a dough.

Wrap dough in plastic wrap, flatten it into disc and refrigerate for 1 hour.

Lightly grease and flour 10"(25 cm) baking dish.

Roll out the chilled pie dough. Place the dough into prepared baking dish and press the edges. Cut the excess dough. Pinch the edges and poke the dough with a fork to create air pockets.

Peel and grate the apples.

Add light brown sugar, flour, cinnamon, nutmeg and lemon juice to a bowl with apples. Stir well to combine.

For the crumble, combine flour, light brown sugar and butter. Mix with a fork until crumbly.

Preheat the oven to 350 F (180 C).

Spoon and press the apple filling to the side of a bowl to squeeze out some of the liquid and place the filling into the crust.

Sprinkle the crumble over the apples.

REFRIGERATE PIE FOR 15 MINUTES BEFORE BAKING!

Bake in preheated oven for 55-60 minutes or until lightly browned on top.

Allow the pie to cool for minimum 3 hours before serving.

Serve with vanilla ice cream.

This pie is the best cold, from the refrigerator.
