Fruit Tomato ceviche with vegetables! Freshly picked fruits & vegetables from my Magical Backyard

I am happy sharing with you , that I’ve been really enjoying blogging here with simple , home cooked , friendly & healthy recipes these past few days of our lockdown and i promise - To bring to you ‘The easiest & simplest way to gourmet cooking!’

“ A chef Nobu “ inspired recipe of a fantastic citrusy ceviche sauce !
I tasted this divine concoction on one of those vegetarian Monday on one of my travels to the US .
( Monday being a vegetarian day for me , one of my favourite cuisine when I want to treat myself is definitely Japanese ! )
I believe, we in India are very blessed with fresh vegetables daily coming straight from our farmers into the markets should take this opportunity to prepare this dish with the very freshest of vegetables & enjoy them !

Tomato & vegetable ceviche !
serves 2 comfortably!

Ingredients-
ceviche sauce -
2tsp chilli red paste
120 ml lemon juice
4 tsp Ponzu
2tsp kiko man ( soya )
1/2 tsp fresh black pepper powder
2-3 cloves garlic finely chopped
1tsp ginger finely grated
4 tsp salt water
For ceviche -
1/2 an onion
3-4 okra ( lady finger)
2 Tomato ( nice n plump)
1 cucumber
1 Ginger bud ( or few chopped Gari
50 gm broccoli
1/2 cup Fresh coriander
1/4 cup ( 100 ml ) ceviche sauce
few sprigs of coriander fro garnish
To make salt water :-
1/4 cup plus 3/4 cup water , dissolve the salt & bring to a boil -strain & cool
method
prepare the vegetables - thinly slice the onion ( finely)
wash all vegetables,cut the washed & dried okra into 3 long slices (each ) ,cut the tomatoes into long slices - (6 pieces )dice the peeled cucumber into 2”pieces ( diagonal) cook the broccoli in salt water & cut into small florets finely chop the coriander
mix all the top vegetables & onions in a bowl with the ceviche sauce , leave covered with a cling film to marinate in the refrigerator few mins or serve immediately garnished with more coriander leaves & a slice of lemon!
