Falafel


Healthy ,gluten free & vegan chickpea Patty ....


  one of my favourite protein & greens  packed Binge , I am never guilty of !!


A delicious healthy starter that can be made healthier by baking them, if desired .

Falafels are good vegetarian substitute of a non veg shammi kabab in you Mezze Platter, a great cocktail  hit served with Tahini Sauce & Jalapeños , Hummus ….

specially when you doing a finger food  for A cocktail only evening !!


Falafel is a deep-fried ball, or a flat or doughnut-shaped patty, made from ground chickpeas, fava beans, or both. Herbs, spices, and onion relatives are commonly added to the dough. It is a well-known Middle Eastern dish .






Ingredients

2 cups dry chickpeas (uncooked/ raw)

oil as needed for frying

1 green chilli ( optional)

1 medium onion cubed

1½ teaspoon cumin powder

4 garlic cloves

¼ to ½ cup flat leaved parsley ( or coriander  leaves) chopped

1 teaspoon ground coriander (powder)

¼ teaspoon ground pepper (powder)

¼ teaspoon cayenne pepper

½ teaspoon salt to taste .

Method

Preparation for falafel -

Wash and soak chickpeas for overnight or at least for 8 hours.

Discard the water and rinse them well. Drain them to a colander. ( never use this soaked in  water as its tremendously gassy in nature)

Process to a coarse paste in a blender the - chickpeas, cumin, coriander, pepper, cayenne, salt, onion, garlic, parsley .

If the mixture is not processed well the balls can break in the oil. Refrigerate for a few minutes (15/20 ) at least if possible.

(a very small ball can be dropped it in the hot oil to check if it is binding is right consistency, or can add a bit of chickpea flour  & knead to bind …

Frying falafel-

Heat oil in a deep pan just enough to half immerse the falafel.

Make lemon sized balls and press them gently to bind the mixture well.

Gently slide them one after the other to the hot oil. Do not disturb them for a minute or two.

Deep fry them on a medium flame until golden & crisp. Remove the falafel to a plate or kitchen towel to absorb any excess oil .

Serve falafel with favorite dip or as a stuffing in pita bread or wraps.
