Chicken Momos
-My Chefs from Nepal always makes these for us when ever we crave them !
Momo are typical South Asian dumpling !
They are a common street snack to Tibet, Sikkim (India), Bhutan and Nepal.
It is similar to Chinese dim sum , Japanese gyoza , pot sticker and Korean mandu.
This dish became gradually very popular in parts of India with the incoming of our Nepalese & Tibetan visitors , who came in for business , work and various political reasons & have happily started their business of Momos all over , be it north or the south ...
Momos are generally made with minced meat but as the dish moved to different places, people have adapted & started making fillings to their liking such as chicken, prawn, vegetables, paneer, tofu ....
Here I am sharing the recipe for the popular by choice Chicken Momos .
The dough is normally made of whole purpose flour & very similar to how we knead our Roti atta but with maida.
The stuffing is made is meat & spices , herbs finely minced to make a smooth filling

Ingredients
for Dough
2 cups All Purpose Flour / Maida -
Salt - 1 tsp
water as required to make a tight but smooth dough .
Filling - Chicken
Chicken Mince - 500 g 2 breast s
Onion - 1 Nos finely chopped
Spring Onion - 2 nos finely chopped
Coriander - small bunch finely chopped ( optional)
Green Chili - 2 nos finely chopped
Ginger - 1 inch finely chopped
4 cloves Garlic finely chopped .
2 Tbsp (kikkoman )Soy Sauce -
Salt - as per taste
Black Pepper Crushed - 1/2 tsp
2 Tbsp butter
1 tsp Sesame Oil ( optional)

onion 3 medium
green chilli -2
ginger -2” piece
soya sauce ( as per colour -1tsp
salt & pepper
oil - 1/2 cup Heat to smoking

Method-
Knead together with water to make a soft dough like our Roti dough but tighter Cover it and keep aside to rest for 20-30 min
mince the chicken with all the above spices & herbs , add the butter & oil to make a smooth sticky filling
Now make small balls of the dough and roll into very thin 4-5 inch rounds.
Take each round piece and place some filling in the center, bring the edges together and begin to seal in a twist and fold manner. With each sealing put the two ends together and fold them moving to the end of the round this way.
Steam in a steamer for about 10 minutes and serve hot with sauce or in clear broth with some carrots & lettuce .

For the sauce -
finely chop the - onion, green chillies & ginger add to it the seasoning- (kikkoman ) soy sauce , salt & pepper.
Heat the oil to smoking hot & pour over the mixture . stir .
serve with Hot Momos .
