Bhindi - do pyaza

Ingredients:
1/2 cup ( 150 ml ) oil
2 med. Onion - chopped into cubes
500 gm Bhindi ( okra )
1 teaspoon cumin seeds
1/2 teaspoon carom seeds
2 leaves bay leaf
2 teaspoon ginger
3 green chilli
1/2 cup chopped onion
1/2 cup grated tomato
2 teaspoon coriander crushed semi fine
1/2 teaspoon turmeric
2 teaspoon Kashmiri red chilli powder
2 teaspoon cumin powder
1 1/2 teaspoon salt
1/2 cup yoghurt (curd)
1/2 teaspoon garam masala powder
Garnish
handful of coriander leaves
Method : prepare the BHINDI
Sharing here is an important tip - Bhindi should be completely dry or it gets sticky so Wash the bhindi , Pat Dry completely & Cut into 1 .5”pieces & Fry the bhindi - keep aside .
First of all wash okra under running water twice.
2.Once done, pat dry the pieces on a kitchen cloth.
3.cut the pieces into 1.5-2 inch pieces.
4.Take a deep kadai , add about 1/2 cup oil , when hot
5. fry the bhindi until it is 70% cooked (turns partially tender). 6.Once done, add the onion cubes and fry for 2-3 minutes
7 now remove onto a dish keep aside .
8 in same wok / kadai add a spoon of oil ,
temper with -
add cumin seeds, bay leaves, carom seeds, green chilli and ginger to oil. Saute the ingredients for 1 minute.
Once done, add the grated onion and grated tomato to the tempering. Cook for 2-3 minutes. Now, add coriander powder, cumin powder, turmeric and Kashmiri red chilli powder to it. Mix all the ingredients well for 1 minute.
Now , Add the fried okra to it and mix well. Cook for 2 minutes.
11.salt and then add yoghurt along with onion cubes,
Mix all the ingredients well and cook further for a minute .
12 Finally, Add garam masala powder, stir well and switch off the flame. Serve hot, garnish with fresh coriander leaves and lemon slice. Enjoy it with roti , paratha or best with bhakri !
