“Mediterranean/ Middle Eastern Mezze,”

This easy 7 ingredient recipes is the most simple dip I make! A great cocktail snack served with pita bread, lavash , Falafel , kababs or crudités SERVING SUGGESTION: Serve chilled, this recipe can be doubled up for a party & made the previous day, stores well covered in a refrigerator for a couple of days! try it once and it only gets better & better as you master the texture & taste!

INGREDIENTS: 1 cup dried Chickpeas 2Tbsp Tahini (White sesame paste) 1/2 tsp powdered cumin 2-4 cloves garlic crushed ¼ cup Olive Oil 2 tablespoon lemon juice

salt to taste. To Garnish: 1/4 cup olive oil Chilli powder and a few reserved boiled chickpeas parsley /chopped fresh coriander leaves.

METHOD: Wash the chickpeas, cover till fully covered with water & soak overnight. Drain and wash well, place in a cooker with 2 cups of water & cook thoroughly.(about 3/4 whistles) . Drain in a colander reserving 1 cup of the boiled liquid with a Tablespoon or two of the boiled chickpeas for garnish. In a food processor, blend the chick peas, garlic, cumin powder , tahini, salt to taste & lemon juice -adding 2/3 tablespoons of the reserve chickpea liquid blend (add more liquid as required through the opening) till mixture is well blended, drizzle with olive oil . When almost coarsely pureed, remove into a shallow plate creating a dip at the centre, drizzle with Olive oil all over and garnish with chili powder, few scatter of boiled chickpeas & coriander leaves . makes about 2 ½ cups
